I made some pumpkin cheesecakes for Halloween party on Saturday.  They look great, although need to be taste tested for quality assurance.

Earlier in the day I smoked three fresh steelhead that I got from up Erie over the weekend.  Ricco is the man!

I used this brine recipe I found online.  I soaked them over night, then dried them off in the morning and took them to work with me.  Coated with honey and cracked pepper as suggested and smoked with hickory wood chips for roughly 7 hours.   A fellow coworker brought in a two level electric smoker that worked great for this.  Only have the before picture from when one was caught.
