Couscous mango kale salad

Chopped up half can artichoke
Handful kale de-stemmed and chopped
One mango chopped
Diced onion
Pinch of golden raisins
pinch of sunflower seeds

Sauce was the zest of lemon tablespoon red wine vinegar and about teaspoon or so of honey

The couscous was cooked with 5-7 button mushrooms and 3 Bella stems minced in food processor.

Cooked couple cloves of garlic, diced onion, and added minced mushrooms. Used container for ratio of grain / liquid but used vegetable broth in replace of water.
